Turkey, pea, and blue cheese rice Casserole

2 pkg (each 250 g) Tilda Coconut Steamed Basmati Rice

2 cups (500 mL) shredded cooked turkey

1 cup (250 mL) frozen peas

3/4 cup (175 mL) reduced-sodium chicken broth

1/2 cup (125 mL) finely crumbled blue cheese

2 green onions, finely sliced

1/2 cup (125 mL) dried cranberries

1/4 cup (60 mL) sliced almonds

2 tbsp (30 mL) butter, melted

1/4 tsp (1 mL) each salt and pepper

2 tbsp (30 mL) finely chopped fresh parsley

  1. Preheat oven to 400°F (200°C). Cook rice according to package directions.
  2. Toss together rice, turkey, peas, broth, blue cheese, green onions, cranberries, almonds, melted butter, salt and pepper. Scrape into buttered 8-inch square (2 L) baking dish.
  3. Bake for 15 to 20 minutes or until heated through and steaming. Sprinkle with parsley before serving.


Substitute feta or goat cheese for blue cheese if desired.
