Thai Cashew and Rice Coleslaw

2 pkg (250 g each) Tilda Ready to Heat Lime Cilantro Rice
2 cups (500 mL ) prepared coleslaw mix
2 cups (500 mL) bean sprouts
1 cup (250 mL) matchstick carrots
1/2 cup (125 mL) fresh cilantro leaves
1/4 cup (60 mL) chopped toasted cashews
1 Thai chili pepper, thinly sliced

Peanut Butter Dressing:
1/4 cup (60 mL) creamy peanut butter
3 tbsp (45 mL) rice wine vinegar
1 tbsp (15 mL) soy sauce
1 tbsp (15 mL) vegetable oil
2 tsp (10 mL) honey
1 tsp (5 mL) sesame oil
Pinch salt

  1. Peanut Butter Dressing: Whisk together peanut butter, vinegar, 2 tbsp (30 mL) hot water, soy sauce, oil, honey, sesame oil and salt.
  2. Heat rice according to package directions.
  3. Toss rice, coleslaw mix, bean sprouts, carrots and cilantro with dressing to coat.
  4. Sprinkle cashews and chili pepper over top.


You can substitute cashew butter for the peanut butter if desired.
