2 cups (500 mL ) prepared coleslaw mix
2 cups (500 mL) bean sprouts
1 cup (250 mL) matchstick carrots
1/2 cup (125 mL) fresh cilantro leaves
1/4 cup (60 mL) chopped toasted cashews
1 Thai chili pepper, thinly sliced
Peanut Butter Dressing:
1/4 cup (60 mL) creamy peanut butter
3 tbsp (45 mL) rice wine vinegar
1 tbsp (15 mL) soy sauce
1 tbsp (15 mL) vegetable oil
2 tsp (10 mL) honey
1 tsp (5 mL) sesame oil
Pinch salt
You can substitute cashew butter for the peanut butter if desired.
