Red Lentil Dahl with Basmati

Serves: 7.5 cups


1 1/4 cups (300 mL) Tilda® Traditional Pure Basmati Rice
1 tbsp (15 mL) coconut oil
2 tbsp (30 mL) mild Indian curry paste
1 tsp (5 mL) curry powder
3 1/2 cups (875 mL) dairy free coconut drink
1 cup (250 mL) red lentils, rinsed
2 tsp (10 mL) ground turmeric
1 1/2 tsp (7 mL) salt
1/2 tsp (2 mL) brown sugar
1/2 tsp (2 mL) pepper
Pinch cayenne pepper
2 tbsp (30 mL) lime juice 
2 green onions, thinly sliced

  1. Heat coconut oil in saucepan set over medium heat; cook curry paste and curry powder for about 2 minutes or until fragrant. Stir in dairy free coconut drink; bring to boil.
  2. Stir in lentils, turmeric, salt, sugar, pepper and cayenne. Reduce heat to medium-low; simmer for 15 to 20 minutes or until lentils are very tender and mixture is thickened. Stir in lime juice.
  3. Meanwhile, cook rice according to package directions. Divide among 4 bowls. Top with dahl and garnish with green onions.


Substitute chopped fresh parsley or cilantro for green onions.
