Moroccan Spiced Lentil Salad

2 pkg (250 g each) Tilda® Whole Grain Steamed Basmati Rice
1 tsp (5 mL) orange zest
1/4 cup (60 mL) orange juice
2 1/2 tbsp (37 mL) red wine vinegar
2 tbsp (30 mL) olive oil
1 shallot, minced
3/4 tsp (4 mL) salt
1/2 tsp (2 mL) each ground cumin and coriander
1/2 tsp (2 mL) curry powder and pepper
1 can (540 mL) lentils, drained and rinsed
3/4 cup (175 mL) shredded carrots
2 chopped Medjool dates, pitted and chopped
1/3 cup (75 mL) chopped toasted almonds
2 tbsp (30 mL) raisins
2 tbsp (30 mL) chopped fresh mint
2 tbsp (30 mL) chopped fresh parsley

  1. Cook rice according to package directions; let cool completely.
  2. Whisk together orange zest, orange juice, vinegar, oil, shallot, salt, cumin, coriander, curry powder and pepper. Stir mixture into rice.
  3. Stir in lentils, carrots, dates, almonds, raisins, mint and parsley.


  • Substitute dried apricots for dates or raisins if desired.
  • For a spicy finish, serve with store-bought harissa sauce.
