Green Curry Coconut Haddock with Basmati

1 cup (250 mL) Tilda Traditional Basmati Rice
2 tbsp (30 mL) vegetable oil
1 onion, chopped
2 cloves garlic, minced
2 tbsp (30 mL) green curry paste
1 medium zucchini, sliced
2 cups (500 mL) coconut drink
1 lb (500 g) haddock fillets, cut into bite-size pieces
1/4 tsp (1 mL) salt
2 tbsp (30 mL) lime juice
2 tbsp (30 mL) chopped fresh cilantro

  1. Cook rice according to package directions. Set aside.
  2. Heat oil in large skillet or wok set over medium heat; cook onion and garlic for about 5 minutes or until softened. Add curry paste; cook for 1 minute or until fragrant.
  3. Add zucchini, coconut drink, haddock and salt; bring to boil. Reduce heat; simmer for 5 to 7 minutes or until haddock is cooked and zucchini is tender. Stir in lime juice.
  4. Serve curry over rice. Sprinkle with cilantro.


You can substitute boneless chicken breast if desired.
