1 pkg (250 g) Tilda® Pure Basmati Rice Ready to Heat
1 tbsp (15 mL) canola oil

1 small onion, finely chopped
1 stalk celery, finely chopped
1 carrot, finely chopped
2 cloves garlic, minced
1/4 tsp (1 mL) each salt and pepper
1 carton (1 L) chicken broth
2 bay leaves
1 cup (250 mL) shredded cooked chicken
1/2 cup (125 mL) frozen peas
2 tbsp (30 mL) finely chopped fresh parsley
1 tbsp (15 mL) lemon juice
1 tsp (5 mL) lemon zest

  1. Heat oil in large saucepan set over medium-high heat; cook onion, celery, carrot, garlic, salt and pepper for about 5 minutes or until vegetables are tender. Stir in broth and bay leaves; bring to boil.
  2. Stir in chicken, peas and rice; return to boil. Reduce heat to medium-low; cook for about 5 minutes or until heated through. Stir in parsley, lemon juice and zest. Remove bay leaves.


Substitute frozen corn, green beans or broccoli florets for frozen peas if desired.
